Showcase Shortbreadwith fused or Infused Olive Oil


Basic Ingredients:

3 cups white whole wheat flour, sifted

1 cup powdered sugar

1 teaspoon sea salt

2 tablespoons fresh seasonings*

1 cup Mighty Olive infused or fused olive oil**

Instructions:

Preheat oven to 325 degrees. Grease a 9”x9” baking dish. (Glass is nice.)

In a medium-sized bowl, whisk together everything but the olive oil. Pour in the olive oil and stir until it is incorporated.

Transfer the dough to the baking dish and press down into an even layer. Prick the surface all over with a fork

Bake for about 45 minutes until the surface feels firm to the touch and it is lightly golden brown around the edges.

Cool the shortbread in the pan for 20 minutes. Then, using a very sharp knife, cut it into squares.

Let the shortbread pieces cool in the pan before removing them with a sharp spatula.

The savory ones are less like cookies and more like interesting crackers. Bring the sage shortbread to Thanksgiving dinner. Serve the herb one with tomatoes and cheese.
