Lemon marinated zucchini carpaccio with  pink pepper and grana cheese

Carpaccio di zucchini al pepe rosa e grana

Ingredients:

-       3 zucchini (light green color)

-       1 lemon fresh juice

-       100 ml extra virgin olive oil from The Mighty Olive

-       50 gr Grana Padano cheese (Grano Padano is a subtler and less nutty and salty than Parmigiano)

-       Pink pepper, salt

 

Method:

Cut zucchini in thin slices (use a meat slicer or mandolin.)  Put the first layer of zucchini in a deep rectangular dish, add lemon fresh, olive oil, salt, pink pepper, put the second layer …. Repeat the procedure till you finish zucchini. Cover the dish and put it in refrigerator for 2 hours. Add flakes of Grana Padano cheese before to serve.
